Cake, meal and pulp

Three words used interchangeably and priced differently.

Cake and meal are the same raw material at two stages of oil removal. Press an oilseed and the residue is cake — 5–12 % fat remaining, carrying the fatty acid profile of the seed. Send that cake to solvent extraction and toasting and the residue is meal — fat down to 1–1,5 %, protein a larger share of what remains. Cake is bought for energy and fat, meal for protein.

Pulp involves no oil. Sugar beet pulp is what remains of the beet after hot water has washed the sugar out. Fibre and energy, little protein. Wysłodki in Polish, polpe di barbabietola in Italian, pulpe de betterave in French.

Cake and meal come from a seed. Pulp comes from a beet.

Molasses is the syrup separated at the same sugar factory as the pulp — which is why the two sit in one category here, and cake and meal in another.
